Preps

You can’t really go wrong with a nice fresh beef stir fry. It’s easy to cook, versitile, and you can add healthy and fresh options that take it to the next level. So let’s do that with Chef Bets 👨‍🍳 take on a classic beef stir fry.

So for this beef stir fry we’re going to use the ingredients pictured above. (Peas 🫛are not in the picture but they are used). Here’s the delicious veggies we will be using, greens beans, red, green, and white onion, and broccoli.

First thing first guys. We need to marinate that beef. You want to get that in the marinade 20-30 minutes before you cook. Then we’re going to Velvet the meat with an eggwhite. It’s an chinese technique that I learned while watching Ming Tsai on PBS’s “Simply Ming”. Chef Tip Here:  Velveting beef with an egg white is a classic Chinese cooking method that keeps lean or tough cuts tender and juicy in stir-fries. The alkalinity of the egg white breaks down tough muscle fibers, while cornstarch seals in moisture Here is the recipe for that.

Beef Stir Fry Marinade

Soy sauce: 2 tbsp
Oyster sauce: 1 tbsp
Honey: 1 tbsp
Shaoxing wine or dry sherry: 1 tbsp
Water: 1 tbsp
Neutral oil: 1 tbsp
Fresh ginger, minced: 1 tbsp
Garlic, minced: 3 cloves
Rice vinegar: 1 tsp
Sesame oil: 1 tsp
Cornstarch: 1 tsp

1 eggwhite for velveting the beef.

  • Whisk all ingredients together until the honey and cornstarch are evenly dispersed.
  • Toss  beef thoroughly in the marinade.
    Refrigerate for 20–30 minutes.
  • After the beef has marinated for the alloted time this is when you will add the eggwhite. 1 whole eggwhite per 1 pound of beef.

Ok. So the Beefs done for now.  Lets make a stir fry sauce real quick then move on to veggie prep work.

Chef’s Honey Ginger Soy Stir Fry Sauce

Soy sauce: ¼ cup
Oyster sauce: 2 tbsp
Honey: 2 tbsp
Water or beef stock: ½ cup
Shaoxing wine or dry sherry: 2 tbsp
Rice vinegar: 1 tbsp
Garlic, minced: 1 tbsp
Fresh ginger, minced: 1 tbsp
Sesame oil: 1 tsp
Cornstarch: 1 tbsp
Cold water (for slurry): 2 tbsp

Combine the soy sauce, oyster sauce, honey, stock, wine, vinegar, garlic, and ginger in a saucepan.
Bring to a gentle simmer for 2–3 minutes.
Mix the cornstarch with the separate cold water until smooth.
Slowly whisk the slurry into the simmering sauce.
Cook for 1–2 minutes until glossy and thick, then stir in the sesame oil.

Veggies

  • 1/4 red onion medium dice
  • 1/2 white onion small dice
  • 4 oz of broccoli 🥦. A small crown trimmed down to bite size pieces
  • 4 oz of green beans
  • 3 oz frozen peas
  • 2 carrots ribboned (on the mandolin)
  • Green onion as small of a cut as you can get
  • 3 cloves minced garlic

*If you don’t have a Mandolin or dont know how to do the ribbon cut for the carrots a small dice is fine as well. 😄

Most veggies for this meal can be cooked before you start cooking the beef so you are not doing a bunch of cooking at once. I would start by cooking the broccoli, carrots, and green beans. The carrots and green beans can be cooked in a small amount of water with salt and pepper until just tender about 5-7 minutes. Broccoli same deal just in a separate pan.  When veggies are done you’re going to want to cool them fast. Ice bath if possible if not spread them on a plate and place them in your freezer. Don’t forget them. 🥶That completes vegetable prep work. We are now ready to cook.

Start by cooking your rice

Jasmine Rice

  • 1 1/2 cup rinsed Jasmine rice
  • 21 ounces of water Chef Tip: (7 ounces of water per 1/2 cup of rice I have found make for the best 👌 rice 🍚)
  • 1 1/2 tsp kosher salt 🧂

Bring water to a boil then add you salt. Add rice and reduce heat to low. Rice should cook for 12-15 minutes. While the rice is cooking we’ll be whipping up the rest of this dish.

  • 1. Heat pan with olive oil. Toss in red onion first for 2 minutes then white onion for an additional 3-5 minutes. Toss in garlic
  • 2. Push onions to the side and toss in your marinated beef and cook for just 2-4 minutes.  Toss in chopped broccoli
  • 3. In a second pan heat up your carrots and green beans in a tsp of oil. Toss in peas add a small amount of water to steam peas and cook for 3 minutes.
  • 4. Add veggies to beef pan and add you stir fry sauce. Toss everything together.
  • 5. Pat yourself on the back. We’ve done it. Now let’s plate and eat.

Congratulations 🎊 here’s an idea on how to plate but eat it however want. Enjoy guys
